Idiyappam, a traditional Kerala dish once commonly prepared in wedding homes, can be made soft and fluffy by following a few important steps while preparing the dough. Today, Idiyappam has become a regular item in Malayali kitchens and is also widely served in hotels. Its soft texture and delicious taste make it a popular food, and it can even be enjoyed without a curry by adding coconut milk.

However, preparing Idiyappam as soft as it appears is not always easy. If the dough is not prepared properly, the Idiyappam can become hard. The quality of the rice flour, the quantity of water used, the method of kneading the dough and the steaming time are all important factors in getting the right texture.

Rice flour – 2 cups

Boiling water – as required

Salt – as required

Coconut oil – 1 teaspoon

Grated coconut – as required

The dough should be kneaded well until it becomes soft and free of lumps. Proper kneading is important to ensure that the Idiyappam has a soft texture after steaming.

Once the dough is ready, fill it into an Idiyappam press and squeeze it onto an idli plate. Sprinkle grated coconut over the top. Steam the Idiyappam for about seven minutes. It is important not to steam it for too long, as excessive steaming can affect its texture.
